The Process

The process of sharpening your knives has three stages:

  1. Initial Assessment
    • microscopic edge inspection
    • paper cut test
    • current edge angle assessment
  2. Sharpening
    • setting of edge angle
    • sharpening process, From course to ultra-fine stones (average kitchen knife will see 6 - 8 stones).
    • microscopic edge inspection and angle management during each stage of the process
    • cleaning.
  3. Final Assessment
    • microscopic edge inspection
    • paper cut test

In a nut shell, if I am not happy with your knife after the final assessment, the process will be repeated until I am sure that you will happy every-time you use your knife. Near enough doesn’t cut it for me!
