The process of sharpening your knives has three stages:
- Initial Assessment
- microscopic edge inspection
- paper cut test
- current edge angle assessment
- Sharpening
- setting of edge angle
- sharpening process, From course to ultra-fine stones (average kitchen knife will see 6 - 8 stones).
- microscopic edge inspection and angle management during each stage of the process
- cleaning.
- Final Assessment
- microscopic edge inspection
- paper cut test
In a nut shell, if I am not happy with your knife after the final assessment, the process will be repeated until I am sure that you will happy every-time you use your knife. Near enough doesn’t cut it for me!
